Velvety Tiramisu

Ingredients
  • 24 vegan ladyfingers
  • 1 1/2 cups almond milk
  • 1/2 cup strong coffee, cold
  • 1 tbsp almond extract
  • 1 cup raw cashews, soaked overnight and drained
  • 1/2 cup coconut cream
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder
Instructions
  1. Line a 9x13 inch baking dish with parchment paper.
  2. In a shallow dish, whisk together the almond milk, coffee, and almond extract.
  3. Dip each ladyfinger into the coffee mixture and arrange them in the bottom of the prepared baking dish.
  4. In a high-powered blender, combine the cashews, coconut cream, maple syrup, and vanilla extract.
  5. Blend until smooth and creamy, about 2 minutes.
  6. Pour the cashew cream filling over the ladyfingers.
  7. Refrigerate for at least 4 hours, or overnight.
  8. Before serving, dust the top of the tiramisu with cocoa powder.
