Ingredients
  • 1 bunch kale, chopped
  • 1 bunch spinach, chopped
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 1/4 cup pomegranate seeds (optional)
  • 1/2 cup raw cashews
  • 1/4 cup olive oil
Instructions
  1. In a large bowl, combine the kale, spinach, red onion, cranberries, walnuts, and pomegranate seeds (if using).
  2. In a small saucepan, heat the olive oil over medium heat.
  3. Add the cashews to the pan and cook, stirring occasionally, until golden brown and fragrant.
  4. Remove the cashews from the heat and immediately transfer them to a blender or food processor.
  5. Add 1/4 cup of water, 2 tablespoons of lemon juice, 1 tablespoon of maple syrup, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the blender.
  6. Blend until smooth and creamy.
  7. Pour the warm cashew dressing over the salad and toss to coat.
  8. Serve immediately.
