Ingredients
  • 1 bunch collard greens, stems removed and roughly chopped
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1/2 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1/4 cup bread crumbs
  • 1 tablespoon olive oil
  • 1 teaspoon cajun seasoning
  • 1/2 teaspoon salt
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine collard greens, chickpeas, onion, bell pepper, bread crumbs, olive oil, cajun seasoning, and salt.
  3. Mix well until ingredients are evenly combined.
  4. Form into 6-8 patties.
  5. Place on a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes, or until golden brown and cooked through.
  7. Serve on buns with cajun remoulade sauce.
