Ingredients
1 bunch collard greens, stems removed and roughly chopped
1 can (15 ounces) chickpeas, rinsed and drained
1/2 cup chopped onion
1/4 cup chopped bell pepper
1/4 cup bread crumbs
1 tablespoon olive oil
1 teaspoon cajun seasoning
1/2 teaspoon salt
Instructions
Preheat oven to 400 degrees F (200 degrees C).
In a large bowl, combine collard greens, chickpeas, onion, bell pepper, bread crumbs, olive oil, cajun seasoning, and salt.
Mix well until ingredients are evenly combined.
Form into 6-8 patties.
Place on a baking sheet lined with parchment paper.
Bake for 15-20 minutes, or until golden brown and cooked through.
Serve on buns with cajun remoulade sauce.
