Sautéed Kale and Roasted Sweet Potatoes

Ingredients
  • 1 bunch kale, chopped
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 sweet potatoes, peeled and cubed
Instructions
  1. Preheat oven to 400°F (204°C).
  2. Toss sweet potatoes with olive oil, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 20-25 minutes, or until tender and golden brown.
  4. While sweet potatoes are roasting, heat olive oil in a large skillet over medium heat.
  5. Add onion and garlic and cook until softened, about 5 minutes.
  6. Stir in cumin, salt, and pepper.
  7. Add kale and cook until wilted, about 5 minutes.
  8. Serve sautéed kale with roasted sweet potatoes.
