New England Clam Chowder (Vegan)
A savory, creamy vegan version of the classic New England Clam Chowder, with hearty potatoes, sweet corn, and tender vegan clams made from jackfruit.

Ingredients
- Potatoes, diced
- Sweet corn
- Vegan clam meat (made from jackfruit)
- Onion, chopped
- Celery, chopped
- Vegan butter
- All-purpose flour
- Vegetable broth
Instructions
- Sauté the onion and celery in vegan butter until softened.
- Add the flour and cook for 1 minute, stirring constantly.
- Gradually whisk in the vegetable broth.
- Add the potatoes and corn, and bring to a boil.
- Reduce heat and simmer until the potatoes are tender, about 15 minutes.
- Add the vegan clam meat and cook for 5 minutes more.
- Season with salt and pepper to taste.
- Garnish with fresh parsley.
