Ingredients
  • Potatoes, diced
  • Sweet corn
  • Vegan clam meat (made from jackfruit)
  • Onion, chopped
  • Celery, chopped
  • Vegan butter
  • All-purpose flour
  • Vegetable broth
Instructions
  1. Sauté the onion and celery in vegan butter until softened.
  2. Add the flour and cook for 1 minute, stirring constantly.
  3. Gradually whisk in the vegetable broth.
  4. Add the potatoes and corn, and bring to a boil.
  5. Reduce heat and simmer until the potatoes are tender, about 15 minutes.
  6. Add the vegan clam meat and cook for 5 minutes more.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley.
