Instructions
  1. Heat a large pot over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the diced tomatoes, tomato puree, vegetable broth, coconut milk, and basil.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Puree the soup using an immersion blender or a regular blender until smooth.
  6. Season with salt and black pepper to taste.
  7. Serve warm, garnished with additional basil if desired.
