Roasted Sweet Potato and Black Bean Burritos

Ingredients
  • 1 large sweet potato, peeled and cubed
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 onion, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss sweet potato cubes with olive oil, salt, and pepper.
  3. Spread sweet potato cubes on a baking sheet and roast for 20 minutes, or until tender.
  4. While the sweet potatoes are roasting, heat a large skillet over medium heat.
  5. Add black beans, onion, green bell pepper, red bell pepper, chili powder, cumin, paprika, salt, and pepper to the skillet.
  6. Cook for 10 minutes, or until the vegetables are softened.
  7. Remove the skillet from the heat and stir in the roasted sweet potatoes.
  8. Place a large tortilla on a plate and add a scoop of the roasted sweet potato and black bean mixture.
