Ingredients
  • 1 pound brussels sprouts, trimmed and halved
  • 1 tablespoon olive oil
  • 1/2 cup chopped pancetta
  • 1/2 cup chopped chestnuts
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Toss brussels sprouts with olive oil, salt, and pepper.
  3. Spread brussels sprouts on a baking sheet.
  4. Roast for 20-25 minutes, or until caramelized and tender.
  5. In a large skillet, cook pancetta over medium heat until browned.
  6. Add chestnuts and cook for 2-3 minutes, or until softened.
  7. Add brussels sprouts to the skillet and cook for 5 minutes, or until heated through.
  8. Serve immediately.
