Ingredients
  • 1 medium acorn squash, halved and seeded
  • 2 tablespoons avocado oil
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ cup pure maple syrup
  • 1/4 teaspoon fine sea salt
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Place the acorn squash halves on the prepared baking sheet.
  4. Drizzle with avocado oil and season with cinnamon, nutmeg, salt, and maple syrup.
  5. Toss to coat.
  6. Roast for 30-35 minutes or until tender and slightly browned at the edges.
