Ingredients
1 1/4 pounds ripe Roma tomatoes, chopped
1 medium yellow or white onion, chopped
1/4 cup chopped fresh basil or cilantro
1/4 cup chopped fresh parsley
2 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon dried oregano
Salt and freshly ground black pepper, to taste
Instructions
In a large bowl, combine the tomatoes, onions, herbs, olive oil, vinegar, oregano, salt, and pepper.
Cover and refrigerate for at least 2 hours, or up to overnight, to allow the flavors to meld.
