Ingredients
  • 1 1/4 pounds ripe Roma tomatoes, chopped
  • 1 medium yellow or white onion, chopped
  • 1/4 cup chopped fresh basil or cilantro
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
Instructions
  1. In a large bowl, combine the tomatoes, onions, herbs, olive oil, vinegar, oregano, salt, and pepper.
  2. Cover and refrigerate for at least 2 hours, or up to overnight, to allow the flavors to meld.
  3. Taste and adjust seasonings as desired before serving.
