Soulful Summer Squash Medley

Ingredients
  • 1 tablespoon olive oil
  • ½ cup chopped yellow onion
  • ½ cup chopped green bell pepper
  • 8 cups sliced summer squash and zucchini (about 2 medium)
  • 2 cups fresh sweet corn kernels (from about 2 ears)
  • 1 teaspoon dried thyme
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
  • ¼ cup chopped fresh parsley
  • Juice of 1 lemon
Instructions
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the onion and bell pepper and cook until softened about 5 minutes.
  3. Add squash, zucchini, corn, thyme, salt and pepper and cook frequently to prevent sticking, until squash and zucchini are tender but still have a slight bite, about 8 minutes.
  4. Season to taste with additional salt and pepper
  5. Remove from heat and stir in parsley and lemon juice to taste.
  6. Serve warm or at room temperature.
