  • Cornstarch

  • Vegetable oil, for frying
  • Maple syrup
  • Mustard (e.g., Dijon, whole-grain)
Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine Brussels sprouts and vegan buttermilk. Set aside for 15 minutes.
  3. In a separate bowl, whisk together flour, cornstarch, and seasonings.
  4. Dip the marinated Brussels sprouts into the flour mixture, coating evenly.
  5. Heat oil in a large skillet over medium-high heat.
  6. Fry the coated Brussels sprouts for 5-7 minutes per side, or until golden brown and crispy.
  7. Drain on paper towels and transfer to a baking sheet.
  8. In a small bowl, whisk together maple syrup and mustard. Brush over the fried Brussels sprouts.
