  • 1 (10-ounce) package frozen spinach, thawed and squeezed dry
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Oil a 9x13-inch baking dish.
  3. Lay one sheet of filo dough in the prepared baking dish. Brush with olive oil.
  4. Repeat with 4 more sheets of filo dough, brushing each sheet with olive oil.
  5. In a large bowl, combine the onion, garlic, spinach, feta cheese, parsley, dill, salt, and pepper. Stir until well combined.
  6. Spread the spinach mixture evenly over the filo dough.
  7. Roll up the filo dough tightly, starting from the long side. Tuck the ends under to seal.
  8. Brush the top of the roll with olive oil.
  9. Bake for 25-30 minutes, or until golden brown.
Why It Works
  • The filo dough is brushed with olive oil before baking, which gives it a crispy, flaky texture.
  • The spinach is cooked before being added to the filling, which prevents it from making the pastry soggy.
  • The feta cheese adds a salty, tangy flavor to the filling.
  • The herbs add a fresh, aromatic flavor to the filling.
  • The lemon yogurt sauce is a refreshing, tangy complement to the savory filling.
