These crispy zucchini fritters are a delicious and easy way to use up summer zucchini. They're made with a combination of almond flour and nutritional yeast, which gives them a nutty flavor and a crispy texture. The feta-mint dip is a perfect accompaniment, adding a creamy and refreshing contrast to the fritters.
The idea for these fritters came to me one day when I was looking for a way to use up some leftover zucchini. I had tried making zucchini bread before, but it always turned out too dense and heavy. I wanted something lighter and crispier, so I decided to try making fritters. At first, I wasn't sure what to add to the batter to give it flavor, but then I remembered that I had some almond flour and nutritional yeast in my pantry. I added those to the batter, along with some chopped red onion, garlic, thyme, salt, and pepper. The result was a delicious and crispy fritter that was perfect for a light lunch or dinner.
