Vegan Coconut Shrimp with Mango-Avocado Salsa

The inspiration for this recipe came to me in a dream. I was on a beach in Thailand, eating fresh coconut shrimp. The shrimp was so delicious that I woke up craving it. But I'm vegan, so I knew I couldn't just go out and buy some coconut shrimp. So I set out to create my own vegan version of this dish. After a few tries, I finally came up with this recipe. It's not exactly the same as the coconut shrimp I had in Thailand, but it's pretty darn close. And it's definitely vegan!

Ingredients
  • 1 pound tofu, extra firm
  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 cup cornstarch
  • 1/2 cup plant-based milk
Instructions
  1. Press the tofu to remove excess water.
  2. Crumble the tofu into a large bowl.
  3. Add the coconut, almond flour, smoked paprika, garlic powder, black pepper, cornstarch, and plant-based milk to the bowl.
  4. Mix well until the tofu is evenly coated.
  5. Form the mixture into 1-inch balls.
  6. Heat a large skillet over medium heat.
  7. Add the coconut shrimp balls and cook until golden brown on all sides.
  8. Serve with the mango-avocado salsa.
