Tex-Mex Pinto Bean and Collard Green Burrito Bowls
Tex-Mex Pinto Bean and Collard Green Burrito Bowls are a delicious and easy way to get your Tex-Mex fix. The pinto beans are simmered until tender, then combined with sautéed collard greens, onions, garlic, and bell peppers. The mixture is seasoned with chili powder and cumin, then served in bowls with your favorite Tex-Mex toppings.
I first came up with this recipe when I was living in Austin, Texas. I was craving Tex-Mex but didn't want to go out to a restaurant. I had some pinto beans in my pantry and some collard greens in my fridge, so I decided to experiment. The result was so delicious that I've been making it ever since.

Ingredients
  • 1 cup dried pinto beans
  • 1 chopped onion
  • 2 cloves minced garlic
  • 1 diced green bell pepper
  • 1 diced red bell pepper
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 bunch collard greens, chopped
  • Your favorite Tex-Mex toppings (such as salsa, guacamole, shredded lettuce, and vegan sour cream)
Instructions
  1. Rinse and sort the pinto beans. In a large pot, combine the beans with 3 cups of water. Bring to a boil, then reduce heat and simmer for 1 hour, or until the beans are tender.
  2. While the beans are simmering, heat a little olive oil in a large skillet over medium heat.
  3. Add the onion and cook until softened, about 5 minutes.
  4. Add the garlic and cook for 1 minute more.
  5. Add the green bell pepper, red bell pepper, chili powder, and cumin to the skillet. Cook for 5 minutes, or until the vegetables are softened.
  6. Add the collard greens to the skillet and cook until wilted, about 3 minutes.
  7. Drain the pinto beans and add them to the skillet. Cook for 5 minutes more, or until the beans are heated through.
  8. Serve the pinto bean and collard green mixture in bowls with your favorite Tex-Mex toppings.
