Mediterranean Chickpea and Spinach Sauté
This Mediterranean-inspired sauté is a quick and easy way to get your daily dose of vegetables. The chickpeas add protein and fiber, while the spinach provides vitamins and minerals. Ingredients
  • Extra virgin olive oil
  • Onion
  • Garlic cloves
  • Ground cumin
  • Ground coriander
  • Crushed red pepper flakes
  • Canned chickpeas
  • Fresh baby spinach
Instructions
  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and cook until softened.
  3. Add garlic, cumin, coriander, and red pepper flakes and cook for 1 minute more.
  4. Add chickpeas and cook for 5 minutes.
  5. Add spinach and cook for 2 minutes or until wilted.
  6. Season with salt and pepper to taste.
  7. Serve immediately.
