Ingredients
1 large bunch spinach, rinsed and chopped
1 (15 ounce) can cannellini beans, rinsed and drained
1/2 onion, chopped
2 cloves garlic, minced
1/4 cup vegan Dijon mustard
1/4 cup apple cider vinegar
1 teaspoon dried thyme
1/2 teaspoon black pepper
Instructions
Heat a large skillet over medium heat.
Add the chopped onions and garlic and cook until softened.
Add the spinach and cook until wilted.
Stir in the drained cannellini beans, vegan Dijon mustard, apple cider vinegar, thyme and black pepper.
Cook for 5 minutes, or until the flavors have melded.
Serve warm.
