Savory Mustard Spinach with Cannellini Beans
This savory side dish is a quick and easy way to get your greens and beans. The spinach wilts down quickly, and the cannellini beans add a boost of protein and fiber. The Dijon mustard and apple cider vinegar add a tangy flavor that brightens up the dish. Serve this warm as a side dish or as a main course with a side of crusty bread.
This recipe was inspired by a dish I had at a vegan restaurant in New York City. I was so impressed by the flavors that I knew I had to recreate it at home. After a few tries, I came up with this recipe, which is now one of my favorite side dishes. I love the way the spinach and beans come together, and the Dijon mustard and apple cider vinegar add just the right amount of tang. I also like that this dish is so easy to make. It's perfect for a quick and healthy weeknight meal.
