Ingredients
  • 1 bunch collard greens
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15 ounce) can smoked chickpeas, drained and rinsed
Instructions
  1. Remove the stems from the collard greens and chop the leaves into bite-sized pieces.
  2. Heat the olive oil in a large pot over medium heat.
  3. Add the onion and cook until softened, about 5 minutes.
  4. Add the garlic and cook for 1 minute more.
  5. Add the collard greens, vegetable broth, salt, and pepper to the pot.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the collard greens are tender.
  7. Add the smoked chickpeas to the pot and cook for an additional 5 minutes.
  8. Serve immediately.
