Ingredients
1 bunch collard greens
1 tablespoon olive oil
1/2 onion, chopped
2 cloves garlic, minced
1 cup vegetable broth
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (15 ounce) can smoked chickpeas, drained and rinsed
Instructions
Remove the stems from the collard greens and chop the leaves into bite-sized pieces.
Heat the olive oil in a large pot over medium heat.
Add the onion and cook until softened, about 5 minutes.
Add the garlic and cook for 1 minute more.
Add the collard greens, vegetable broth, salt, and pepper to the pot.
Bring to a boil, then reduce heat and simmer for 30 minutes, or until the collard greens are tender.
Add the smoked chickpeas to the pot and cook for an additional 5 minutes.
