Aioli is a classic French sauce made with garlic, olive oil, and egg yolks. It's typically used as a condiment for dishes like grilled vegetables, roasted potatoes, and fish. While traditional aioli is delicious, I wanted to create a lighter, brighter version that would be perfect for summer. This tangy herb aioli is the result of my experimentation, and it's quickly become one of my favorite sauces. It's the perfect way to add a burst of flavor to any dish, and it's especially good with grilled vegetables and roasted potatoes.

Why It Works
  • The avocado provides a creamy base for the aioli, while the fresh herbs add a bright, herbaceous flavor.

  • The olive oil adds a smooth, velvety texture to the aioli.
  • The salt and pepper help to enhance the flavors of the other ingredients.
