The Green Goodness Wrap was born out of a desire for a healthy and satisfying lunch that could be easily packed and eaten on the go. I experimented with different combinations of ingredients until I landed on this one, which has the perfect balance of flavors and textures. Ingredients
  • 1 large collard green or lettuce leaf
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped avocado
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 2 tablespoons hemp seeds
  • 1 tablespoon olive oil
  • Lemon-tahini dressing (see recipe below)
Instructions
  1. Rinse the collard green or lettuce leaf and pat dry.
  2. Arrange the cucumber, avocado, red onion, cilantro, and hemp seeds in the center of the leaf.
  3. Drizzle with olive oil and lemon-tahini dressing.
  4. Fold the sides of the leaf over the filling and roll up tightly.
  5. Slice in half and serve immediately.
