Lemongrass Lush
This salad is a refreshing and flavorful way to enjoy lemongrass. The lemongrass, Thai basil, black beans, peanuts, and coconut milk all add their own unique flavor to the salad, creating a complex and satisfying dish. The salad is also very easy to make, and can be served immediately or refrigerated for later.
This salad was inspired by a trip I took to Thailand. I was immediately struck by the vibrant flavors of the food, and I wanted to recreate some of those flavors at home. This salad is my attempt to do just that. I've used fresh lemongrass, Thai basil, black beans, peanuts, and coconut milk to create a salad that is both flavorful and refreshing. Ingredients
  • 1/2 cup fresh lemongrass, lightly chopped
  • 12 fresh Thai basil leaves, torn
  • 3 cups thinly sliced zucchini
  • 1 medium carrot, peeled and thinly sliced
  • 1 cup lightly salted black beans
  • 1 cup fresh bean sprouts
  • 1/4 cup chopped, unsalted peanuts
  • 1/2 cup thick coconut milk
Instructions
  1. In a large bowl, combine all of the salad ingredients.
  2. In a small bowl, whisk the coconut milk with the lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat.
  4. Serve immediately or refrigerate for later.
