Instructions
  1. In a clean glass jar, combine water kefir grains, filtered water, and organic cane sugar. Cover with a loose-fitting lid or cheesecloth and secure with a rubber band.
  2. Place the jar in a warm, dark place and allow to ferment at room temperature for 24-48 hours.
  3. After the first fermentation, strain the water kefir through a fine-mesh sieve into a clean glass jar.
  4. Add lemon juice, lime juice, grated ginger, and fresh mint leaves to taste (optional).
