Peashoot Pesto Risotto

Ingredients
  • 1 cup Arborio rice
  • 3 cups vegetable broth
  • 1/2 cup peashoots, chopped
  • 1/4 cup pine nuts
  • 1/4 cup hemp seeds
  • 1/4 cup nutritional yeast
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Heat the vegetable broth in a medium saucepan over medium heat.
  2. Add the Arborio rice to the saucepan and stir to coat.
  3. Reduce heat to low and simmer for 18-20 minutes, stirring occasionally, or until the rice is tender and has absorbed all of the broth.
  4. While the rice is cooking, make the pesto by combining the peashoots, pine nuts, hemp seeds, nutritional yeast, salt, and pepper in a food processor or blender and pulsing until smooth.
  5. Once the rice is cooked, stir in the pesto and serve immediately.
