Botryoidal Algae and Mushroom Risotto

Ingredients
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped mushrooms
  • 1/2 cup botryoidal algae
  • 1/2 cup vegetable broth
  • 1/4 cup white wine
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
Instructions
  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the onion and mushrooms to the pan and cook until softened.
  3. Add the botryoidal algae to the pan and cook for 1 minute.
  4. Add the vegetable broth and white wine to the pan and bring to a boil.
  5. Reduce heat to low and simmer for 15 minutes, or until the liquid has been absorbed.
  6. Stir in the Parmesan cheese and salt and pepper to taste.
  7. Serve immediately.
