Oregano and Roasted Vegetable Pizza

Ingredients
  • 1 head of cauliflower, chopped
  • 1/2 cup of almond flour
  • 1/4 cup of nutritional yeast
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 tablespoon of olive oil
  • 1/2 cup of chopped red onion
  • 1/2 cup of chopped green bell pepper
  • 1/2 cup of chopped mushrooms
  • 1/4 cup of chopped sun-dried tomatoes
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the cauliflower, almond flour, nutritional yeast, salt, and pepper.
  4. Add the olive oil and stir until the mixture is evenly coated.
  5. Spread the mixture onto the prepared baking sheet and bake for 15-20 minutes, or until the crust is golden brown.
  6. Remove the crust from the oven and top with the roasted vegetables.
  7. Bake for an additional 10-15 minutes, or until the vegetables are heated through.
  8. Slice and serve.
