Ingredients
  • 14 oz. chickpeas, rinsed and drained
  • 1 onion, chopped
  • 1 cup fresh chopped coriander
  • 1 tbsp ground cumin
  • 2 tbsp almond flour
  • 1/2 tsp salt
  • 1 tbsp coconut oil, melted
  • 1 tbsp lemon juice
Instructions
  1. In a food processor, combine the chickpeas, onion, coriander, cumin, almond flour, and salt.
  2. Pulse until the mixture is combined but still has some texture.
  3. Add the coconut oil and lemon juice and pulse until combined.
  4. Form the mixture into 8 patties.
  5. Heat a large skillet over medium heat.
  6. Cook the patties for 3-4 minutes per side, or until golden brown and cooked through.
  7. Serve on their own or with your favorite toppings.
