Oregano and Roasted Vegetable Pasta
This simple but flavorful pasta dish is a great way to use up summer vegetables. The roasted vegetables are tender and slightly caramelized, and the oregano adds a bright, herbaceous flavor. The whole dish comes together in just 30 minutes, making it a perfect weeknight meal.

Ingredients
  • 8 ounces zucchini, cut into 1/2-inch thick slices
  • 1 red bell pepper, cut into 1/2-inch thick slices
  • 1 yellow squash, cut into 1/2-inch thick slices
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 ounces spaghetti, cooked according to package directions
Instructions
  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Place the zucchini, red bell pepper, yellow squash, onion, garlic, olive oil, oregano, salt, and black pepper in a large bowl and toss to coat.
  3. Spread the vegetables on a baking sheet and roast in the preheated oven for 30 minutes, or until tender.
  4. Add the cooked spaghetti to the roasted vegetables and toss to combine.
  5. Serve immediately.
