Ingredients
1 medium pumpkin, peeled and cubed
1 can (15 ounces) black beans, rinsed and drained
1 onion, chopped
1 green bell pepper, chopped
1/2 cup chopped fresh cilantro
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Toss pumpkin with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 minutes, or until tender.
Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium heat.
Add onion and bell pepper and cook until softened, about 5 minutes.
Add black beans, chili powder, cumin, salt, and pepper. Cook for 5 minutes more.
In a large bowl, combine pumpkin, black bean mixture, and cilantro.
Form into 8 patties.
Heat 1 tablespoon olive oil in a large skillet over medium heat.
Cook patties for 5 minutes per side, or until cooked through.
