Ingredients
  • 1 medium delicata squash, halved lengthwise and seeded
  • 1/2 cup peeled and sliced apples
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon melted coconut oil
  • 1/8 teaspoon sea salt
  • 1 tablespoon chopped walnuts, optional (for paleo, omit)
  • 1 tablespoon chopped parsley
  • Black pepper to taste
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine squash, apples, cinnamon, coconut oil, and salt.
  3. Spread evenly onto a baking sheet.
  4. Bake for 20-25 minutes, or until squash is tender and browned.
  5. Sprinkle with walnuts, parsley, and black pepper, if desired.
