Ingredients
  • 1 delicata squash, halved lengthwise and seeded
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Place the squash halves on a baking sheet and drizzle with olive oil.
  3. In a small bowl, combine the oregano, thyme, cumin, salt, and pepper.
  4. Sprinkle the herb mixture evenly over the squash.
  5. Roast for 20-25 minutes, or until the squash is tender and slightly browned.
