Watercress and Avocado Salsa

I first came up with this recipe when I was trying to find a way to use up some leftover watercress. I had already made a salad with it, but I still had a whole bunch left over. I didn't want to just throw it away, so I decided to experiment with it in a salsa. I started by adding some avocado, red onion, and cilantro to the watercress. Then I added some lime juice, salt, and pepper. The result was a delicious and refreshing salsa that was perfect for adding a little crunch to my next taco or burrito bowl.

Ingredients
  • 2 cups chopped watercress
  • 1/2 diced avocado
  • 1/4 cup chopped red onion

Instructions
