Ingredients
  • 1 bunch collard greens
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tablespoon horseradish
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Remove the stems from the collard greens and chop the leaves roughly.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the collard greens and cook until they are wilted, about 5 minutes.
  4. Remove the collard greens from the heat and let them cool slightly.
  5. Place the collard greens, olive oil, apple cider vinegar, horseradish, Dijon mustard, salt, and pepper in a blender and blend until smooth.
  6. Taste and adjust the seasonings as desired.
  7. Store the dressing in an airtight container in the refrigerator for up to 5 days.
