Wild Greens and Ginger Stir-Fry
This simple yet flavorful stir-fry is a great way to get your daily dose of greens. The bitterness of the dandelion greens is balanced by the sweetness of the onion and the heat of the ginger and garlic. The tamari or soy sauce adds a savory umami flavor, while the water helps to steam the greens and create a flavorful sauce. This dish is quick and easy to make, and it's a great way to use up any leftover greens you have on hand.
In the early days of spring, when the first tender greens start to emerge from the ground, I always crave a big bowl of stir-fried greens. There's something about the fresh, earthy flavor of greens that just can't be beat. And when they're stir-fried with a little bit of ginger, garlic, and tamari or soy sauce, they're absolutely irresistible.
