Wild Greens and Goat Cheese Pizza
This recipe for cauliflower-based pizza is quick, easy, and high in protein. With a sprinkle of parm, a few wilted greens and a finishing drizzle of olive oil, it's the kind of pizza you might serve at a dinner party, but is easy enough for a weeknight meal.
Pizza dough may be the perfect food. There are few culinary creations that elicit such joy and near-universal appeal. It's a blank canvas that can accept a world of toppings, from the simple pleasures of tomato sauce and cheese to gourmet flights of fancy with exotic meats and artisanal cheeses. Our first priority in developing this cauliflower-based pizza was that it should have all the rustic charm and yeasty flavor of traditional pizza crust, minus the refined flour and hours of rising. The result is a recipe that's quick, relatively low in carbs, and high in protein.

Why It Works
  • Using cauliflower as the base is a great way to lighten up pizza while providing extra nutrients.
  • Blanching the cauliflower before forming the crust helps remove excess moisture, which prevents the crust from becoming soggy.
  • Using a combination of almond flour and nutritional yeast gives the crust a nutty flavor and a boost of protein.
  • Baking the crust on a pizza stone helps to create a crispy exterior.
  • Adding a layer of wild greens to the pizza adds extra flavor and nutrition.
