This recipe was inspired by a dish that I had at a restaurant in the East Village. I was so impressed by the combination of flavors and textures that I decided to try and recreate it at home. After a few tries, I finally came up with a version that I was happy with. I've been making this dish ever since and it's become one of my favorites.

Ingredients
1 cup quinoa
2 cups water or vegetable broth
1 tablespoon olive oil
1/2 onion, chopped
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
Rinse the quinoa in a fine-mesh sieve until the water runs clear.
In a medium saucepan, combine the quinoa, water or broth, olive oil, onion, garlic, oregano, salt, and pepper.
Bring to a boil over high heat.
Reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through and the liquid has been absorbed.
Remove from heat and let stand for 5 minutes before fluffing with a fork.
Stir in the chopped greens and serve warm.
