Celery Root and Coconut Soup
This creamy, comforting soup is a great way to warm up on a cold day. The celery root adds a subtle sweetness and earthy flavor, while the coconut milk gives it a rich, creamy texture. The turmeric, cumin, and black pepper add a warm, savory spice that complements the flavors of the celery root and coconut milk perfectly.
This recipe was inspired by a trip I took to Thailand a few years ago. I was staying in a small village in the north of the country, and one night I had dinner at a local restaurant. One of the dishes I ordered was a celery root and coconut soup. It was so delicious that I asked the chef for the recipe. He was kind enough to share it with me, and I've been making it ever since.

Why It Works
  • The celery root and coconut milk are a great combination because they complement each other's flavors so well. The celery root adds a subtle sweetness and earthy flavor, while the coconut milk gives it a rich, creamy texture.
  • The turmeric, cumin, and black pepper add a warm, savory spice that complements the flavors of the celery root and coconut milk perfectly.
  • The soup is simmered for 20 minutes, which allows the flavors to meld together and develop.
  • The soup is finished with a touch of salt to taste, which helps to balance the flavors and make the soup even more delicious.
