Emerald Veggie Velvet was born out of a desire for a quick and easy soup that was both healthy and delicious. I had been experimenting with different vegetable purees, and I was particularly drawn to the vibrant green color of a puree made with green bell pepper, zucchini, and broccoli. I knew that I had to create a soup around this beautiful puree, and Emerald Veggie Velvet was born.

Ingredients
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped celery
  • 1/2 cup chopped zucchini
  • 1/2 cup chopped carrots
  • 1/2 cup chopped broccoli florets
  • 2 cups vegetable broth
  • 1/2 cup vegan sour cream
  • 1/4 cup fresh basil leaves
Instructions
  1. In a blender, combine green bell pepper, celery, zucchini, carrots, broccoli florets and vegetable broth.
  2. Puree until smooth.
  3. Transfer the mixture to a saucepan and bring to a simmer.
  4. Stir in vegan sour cream and basil leaves.
  5. Cook for 5 minutes, or until heated through.
  6. Serve immediately.
