Ingredients
1/2 cup chopped green bell pepper
1/2 cup chopped celery
1/2 cup chopped zucchini
1/2 cup chopped carrots
1/2 cup chopped broccoli florets
2 cups vegetable broth
1/2 cup vegan sour cream
1/4 cup fresh basil leaves
Instructions
In a blender, combine green bell pepper, celery, zucchini, carrots, broccoli florets and vegetable broth.
Puree until smooth.
Transfer the mixture to a saucepan and bring to a simmer.
Stir in vegan sour cream and basil leaves.
Cook for 5 minutes, or until heated through.
Serve immediately.
