The lemon herb vinaigrette is light and tangy, and it brings all the flavors together perfectly. This salad is perfect for a summer lunch or dinner, and it can be easily customized to your liking.
This salad was inspired by a trip I took to Italy a few years ago. I was staying in a small town in Tuscany, and I had the opportunity to visit a local farmer's market. I was amazed by the variety of fresh produce available, and I couldn't resist buying some of everything. I ended up making this salad with some of the ingredients I bought, and it was so delicious that I've been making it ever since.
