Roasted Sweet Potato and Spinach Green Veggie Burgers

Ingredients
  • 1 large sweet potato, peeled and cubed
  • 1/2 cup chopped spinach
  • 1/4 cup chopped onion
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped zucchini
  • 1 egg, beaten
  • 1/2 cup bread crumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss sweet potato cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes, or until tender.
  3. While sweet potatoes are roasting, combine spinach, onion, bell pepper, and zucchini in a large bowl.
  4. Add roasted sweet potatoes to the bowl and mash with a fork.
  5. Stir in egg, bread crumbs, garlic powder, salt, and black pepper.
  6. Form mixture into 8 patties.
  7. Heat a large skillet over medium heat. Add patties and cook for 4-5 minutes per side, or until golden brown.
  8. Serve on buns with your favorite toppings.
