Ingredients
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can chickpeas, rinsed and drained
1/2 cup roasted red peppers, diced
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup panko breadcrumbs
1/4 cup chopped fresh cilantro
1/4 cup mashed avocado
Instructions
Preheat oven to 375 degrees F (190 degrees C).
Mash the black beans and chickpeas together in a large bowl.
Add the roasted red peppers, onion, celery, breadcrumbs, cilantro, and mashed avocado to the bowl and mix until well combined.
Form the mixture into 6 patties.
Place the patties on a lightly greased baking sheet and bake for 20 minutes, or until golden brown.
