Ingredients
  • 1 bunch Swiss chard, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine the Swiss chard, black beans, onion, bell pepper, cilantro, lime juice, chili powder, and cumin. Toss to coat.
  3. Spread the mixture evenly on a baking sheet and roast in the preheated oven for 20 minutes, or until the Swiss chard is wilted and the beans are heated through.
