Ingredients
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 cup chopped kale
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/4 cup shredded vegan cheese
  • 4 whole-wheat tortillas
Instructions
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and green bell pepper and cook until softened, about 5 minutes.
  3. Add the kale and cook until wilted, about 2 minutes.
  4. Stir in the black beans, chili powder, and cumin and cook until heated through, about 1 minute.
  5. Sprinkle the cheese evenly over the tortillas.
  6. Top with the kale mixture and fold in half.
  7. Cook for 2-3 minutes per side, or until the cheese is melted and the tortillas are golden brown.
