Watercress and Asparagus Burritos with Lemon Tahini Dressing

Ingredients
  • 1 cup watercress, chopped
  • 1 cup asparagus, trimmed and thinly sliced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup crumbled vegan feta cheese
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh parsley
  • 8 whole-wheat tortillas
  • Lemon Tahini Dressing (see recipe below)
Instructions
  1. In a large bowl, combine the watercress, asparagus, red onion, feta cheese, mint, and parsley.
  2. Drizzle with Lemon Tahini Dressing as desired and toss to coat.
  3. Lay out the tortillas and fill each with 1/2 cup of the salad mixture.
  4. Roll up the tortillas and slice in half.
  5. Serve immediately.
