Ingredients
  • 1 cup quinoa
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 zucchini, chopped
  • 1/4 cup kalamata olives, pitted and chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup chopped fresh parsley
Instructions
  1. Rinse the quinoa in a fine-mesh sieve.
  2. Heat the olive oil in a medium saucepan over medium heat.
  3. Add the onion, bell pepper, and zucchini to the pan and cook until softened, about 5 minutes.
