Ingredients
1 cup quinoa
1 tablespoon olive oil
1/2 onion, chopped
1/2 red bell pepper, chopped
1/2 zucchini, chopped
1/4 cup kalamata olives, pitted and chopped
1/4 cup feta cheese, crumbled
1/4 cup chopped fresh parsley
Instructions
Rinse the quinoa in a fine-mesh sieve.
Heat the olive oil in a medium saucepan over medium heat.
Add the onion, bell pepper, and zucchini to the pan and cook until softened, about 5 minutes.
