Ingredients
1 pound green beans, trimmed
1 ripe avocado, peeled and sliced
1/2 cup red onion, thinly sliced
1/4 cup chopped fresh cilantro
1/4 cup lime juice
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Bring a large pot of salted water to a boil.
Add the green beans and cook until tender-crisp, about 3 minutes.
Drain the green beans and rinse with cold water.
In a large bowl, combine the green beans, avocado, red onion, cilantro, lime juice, olive oil, salt, and pepper.
