Ingredients
  • 1 large red bell pepper
  • 1 (10-ounce) package frozen spinach, thawed and drained
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Cut the bell pepper in half lengthwise and remove the seeds and ribs.
  3. Place the bell pepper halves on a baking sheet and drizzle with olive oil.
  4. Roast the bell peppers for 20-25 minutes, or until they are soft and slightly charred.
  5. Remove the bell peppers from the oven and let them cool slightly.
  6. Once the bell peppers are cool enough to handle, scoop out the flesh and place it in a food processor.
  7. Add the spinach, red onion, cilantro, parsley, cumin, chili powder, salt, and pepper to the food processor.
  8. Process until the dip is smooth and creamy.
