Ingredients

  • 1/2 cup cornstarch
  • 1/4 cup sugar-free vanilla pudding mix
  • 1/4 cup unsweetened almond milk
  • 1 vanilla bean, split and scraped
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cinnamon
Instructions
  1. In a medium saucepan, whisk together the coconut milk, cornstarch, vanilla pudding mix, almond milk, vanilla bean pulp, salt, and cinnamon.
  2. Bring the mixture to a boil over medium heat, whisking constantly.
  3. Reduce the heat to low and simmer for 5 minutes, or until the pudding has thickened. Remove from heat and let cool for a few minutes.
  4. Transfer the pudding to a serving bowl and cover with plastic wrap. Refrigerate for at least 4 hours, or overnight.
