I've always been a fan of vanilla pudding, but I've never been a fan of the ingredients in most recipes. Traditional vanilla pudding is made with milk, sugar, and eggs, all of which are things that I try to avoid eating. A few years ago, I started experimenting with making my own vegan vanilla pudding, and I finally came up with a recipe that I love. This pudding is made with coconut milk, cornstarch, vanilla bean, and a few other simple ingredients. It's creamy, delicious, and completely vegan.
Prep time: 15 | Cook time: 5 | Serves: 4
Ingredients
1 can (13 ounces) full-fat coconut milk
1/2 cup cornstarch
1/4 cup sugar-free vanilla pudding mix
1/4 cup unsweetened almond milk
1 vanilla bean, split and scraped
1/4 teaspoon salt
1/8 teaspoon ground cinnamon
Instructions
In a medium saucepan, whisk together the coconut milk, cornstarch, vanilla pudding mix, almond milk, vanilla bean pulp, salt, and cinnamon.
Bring the mixture to a boil over medium heat, whisking constantly.
Reduce the heat to low and simmer for 5 minutes, or until the pudding has thickened. Remove from heat and let cool for a few minutes.
Transfer the pudding to a serving bowl and cover with plastic wrap. Refrigerate for at least 4 hours, or overnight.
When ready to serve, top with your favorite toppings, such as fresh fruit, whipped coconut cream, or chopped nuts.
