Savory Surprise Bowl with Black Bean Tacos and Roasted Veggies
A hearty and flavorful bowl featuring savory black bean tacos and roasted vegetables. This recipe was inspired by a trip to Mexico City, where I had the pleasure of trying a variety of street tacos. I was particularly impressed by the black bean tacos, which were flavorful and satisfying. Ingredients
1 cup cooked black beans
1 small onion, chopped
1 red bell pepper, chopped
1 zucchini, chopped
1/2 cup chopped fresh cilantro
1 teaspoon taco seasoning
1/4 cup shredded cabbage
1/4 avocado, sliced
Instructions
Preheat oven to 400°F (200°C).
Toss chopped onion, bell pepper, and zucchini with olive oil, salt, and pepper.
Spread the vegetables on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
While the vegetables are roasting, prepare the black bean tacos by combining the beans, chopped cilantro, and taco seasoning in a small bowl.
To assemble the bowls, place the roasted vegetables in a bowl and top with the black bean tacos, shredded cabbage, and sliced avocado.
