A hearty and flavorful bowl featuring savory black bean tacos and roasted vegetables. Ingredients
  • 1 cup cooked black beans
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1/2 cup chopped fresh cilantro
  • 1 teaspoon taco seasoning
  • 1/4 cup shredded cabbage
  • 1/4 avocado, sliced
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Toss chopped onion, bell pepper, and zucchini with olive oil, salt, and pepper.
  3. Spread the vegetables on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
  4. While the vegetables are roasting, prepare the black bean tacos by combining the beans, chopped cilantro, and taco seasoning in a small bowl.
  5. To assemble the bowls, place the roasted vegetables in a bowl and top with the black bean tacos, shredded cabbage, and sliced avocado.
