The superfood energy bowl was created by a team of nutritionists and chefs at Serious Eats. They were looking for a way to create a healthy and delicious breakfast that would be easy to make and portable. After months of experimentation, they came up with this recipe.

Ingredients
  • 1 cup frozen berries (such as blueberries, raspberries, or strawberries)
  • 1/2 cup frozen sliced banana
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped almonds
  • 1/4 cup shredded unsweetened coconut
  • 1/4 cup plain vegan yogurt
  • 1/4 cup almond milk (or other plant-based milk)
  • 1 tablespoon chia seeds
  • 1 tablespoon flaxseed meal
Instructions
  1. In a large bowl, combine the berries, banana, walnuts, almonds, coconut, yogurt, almond milk, chia seeds, and flaxseed meal.
  2. Stir until well combined.
  3. Top with additional berries, nuts, and/or seeds, if desired.
  4. Enjoy immediately or store in the refrigerator for later.
